Macaroni & Cheese is good comfort food. Would you post your mother’s recipe if you get a chance?

La Shawn 01.27.06 at 1:45 pm

I’ve never tried to make it myself, and I don’t know if she could tell you how to make it, either. She’s one of those old-school cooks who mixes ingredients without measuring. :)

My mother and grandmother cook by sight. I guess the good food comes from having done it over and over for years. My grandmother makes an awesome sweet tea which I’ve never been able to reproduce.

LS,
Surely as a flight attendant you have ventures out west? What about those “meat and three” diners they have in your neck of the woods?
If you buy a bag of elbow macaroni, they usually have the recipe on the side.
Also, Hattie Mcdaniel was originally from my
“neck of the woods” Denver,Colorado. A recent
History Channel docu about the de-segregation
of Las Vegas in the late 50’s was great.

I did the Quartet Meme on my blog last week.

Under your Favorite Movies, I take it you mean the original Willie Wonka with Gene Wilder? Have you seen the new one with Johnny Depp? What did you think? I know I was reluctant to see it at first…

La Shawn 01.27.06 at 3:18 pm

I made note in the post. Definitely Gene Wilder. The Johnny Depp remake is called “Charlie and the Chocolate Factory” after the book, right? Haven’t seen it. Gene Wilder is the only Willy Wonka for me. ;)

Captain Kirk: What are “meat and three” diners?

Monika: I added you to this comment after you posted. Thanks for reading LBC! That goes for everyone who said they read the blog daily. :)

LS,

They just had a segment on the cooking channel,
and when I was traveling in the Southeast I
encountered some fabulous little “luncheonettes”.
Kinda like mini-buffets, where you go in and say the daily special is meatloaf, then you get a choice of three sides. Usually #1 is mac n’ cheese
followed by veggies, mashed potatoes or any other
kind of food that fits in a steamer set up. UM,UM Good! Definitely not low-cal

LaShawn, I loved your lists! I watched the old “Willy Wonka” over and over again when it first came out in the theater and you could see double features for $1! Wow — that dates me, doesn’t it! :)

Speaking of that movie and Gene Wilder–years later, when I worked in an office right next-door to Wilder’s Beverly Hills office I would sometimes see him — and the darling little Yorkie dog that always accompanied him to work. (His office assistant had another Yorkie…you could always hear the dog getting off the elevator and jingling all the way to the office — it was hilarious!)

One time at the end of a work day, I found myself getting on the same elevator as Mr. Wilder and I wanted to gush about how I grew up loving that movie…but thinking it was important to maintain a professional demeanor all I said was, “Cute dog!” I missed my chance to call him “Mr. Wonka”! Oh well — it’s probably just as well!

Thanks for helping me take a walk down Memory Lane!

While Denzel Washington is one of the best actors of our all time, I wasn’t too fond of Malcolm X, the movie and the person. However, Denzel did play X to a t, which is no surprise since I haven’t seen him in a bad role yet. Nothing tops Glory, Ricochet, Courage Under Fire, Remember the Titans, and John Q.

La Shawn, I’ll always prefer the original Star Trek to The Next Generation. The Enterprise-D’s holodeck gets my vote for SF’s cheesiest stunt. It seemed that 75% of the episodes in ST:TNG (maybe more) took place on the Enterprise-D holodeck.

La Shawn: There’s a very good article in the L.A. Times called “Back to basics: Why does high school fail so many?”. Apparently, according to them, only 48% of freshmen entering public high school in Los Angeles, manage to graduate. 48% ?????

High five to you on A&E’s Cold Case Files.

My wife and I make sure there is at least one episode on the Tivo ready to go at all times. Because if nothing else good is on, you know Cold Case Files will satisfy.

If you don’t have the utmost respect for cold case detectives after watching one episode of that show, well, you must be clueless!

It’s a fascinating and engrossing show.

Stephen 01.28.06 at 8:51 pm

La Shawn,

I “discovered” your website this last week and have returned several times already. Today I was amazed to see that GWTW was one of your favorite movies. I’ve known people, black and white, who are very critical of this movie because of it’s positive portrayal of the ante bellum South.

Several years ago when I lived in Atlanta, I started some family tree work and discovered that North Georgia was the land of my “roots” and that many of my ancestors were right in the thick of things when Sherman came to call.

I had always heard that Margaret Mitchell wrote GWTW using stories that she had heard while she was growing up down there. I ran across a news article from 1939 describing how some older women in the Howell family (my great-grandmother’s name) were upset with Miss Mitchell because she had borrowed several stories from that family and had not asked their permission. The story about Scarlett leading Melanie and her new baby away to escape the Yankees with a cow in-tow was “borrowed” straight from the family of Captain Evan P. Howell. It is interesting that the same family ran a very successful lumber mill after the war and were criticized heavily for doing business with and being too friendly to the Northern occupiers.

I guess my point is that while GWTW is a romantic fantasy of sorts, it is not ALL fiction. Even some of the characters are probably based on people with whom Margaret Mitchell was familiar. For example, you can read about a man named James Dunwoody Bulloch and even Raphael Semmes and see a little of Rhett Butler in both of them. Bulloch’s mansion in Roswell survived the war and was not far from another business owned by another Howell family. (My Howells, by the way, were the poorer cousins!) As insulting as it is to the politically correct crowd, accounts of “faithful” servants like Pork and Big Sam are abundant.

I apologize for the length of this comment but I just thought you might be interested. Thanks :)

Jay 01.28.06 at 10:45 pm

I do much of my cooking by sight, or make modifications by sight even if there’s a base recipe. I’ve come up with recipes I blogged after pointedly working out what the measurements had to be to taste right, but darn that’s hard.

I always think of recipes more as guidelines, anyway. If you have a fair idea what interacts how and what tastes how, it’s easy to experiment. You learn something even from failures, then have fewer of those.

Beto Ochoa 01.29.06 at 11:37 am

Best Macaroni and Cheese
Following ingredients per cup of dry macaroni…
one tablespoon of butter (margarine is ok but greasy)
three tablespoons of half and half
one slice of Kraft American Cheese
1/4 cup of grated cheddar
milk for thinning
salt to taste
Boil as much macaroni as you want.
(great for a quick meal of leftovers)
Drain
Immediately return to pot on a low flame and add butter and half and half.
Stir till butter melts.
Add American cheese and stir till melted.
Add a shot of milk to thin.
Stir in cheddar and remove from heat.
Cover pot and let sit for a minute.
Stir before serving.
If it is too thick; return to heat, add a little milk at a time and stir till you get it the way you want.
After you make this a couple of time you become an expert at it.
